Construction is coming along on the new Pickrell Locker & Smokehouse in Pickrell. Bob Freeman is hoping to have his business open later this fall.

PICKRELL – Bob Freeman is hoping to bring a locker and smokehouse back to Pickrell later this fall.

According to his Facebook page Pickrell Locker & Smokehouse will be a custom butcher shop and processor focused on whole animal butchery and processing with a small retail outlet.

Freeman is currently in the process of putting up a new building on the same site where the Hausman & Sons Processing used to be located next to First State Bank in Pickrell.

The existing building was torn down.

“We are building a new one in the exact same spot,” said wife, Jordan Freeman. “The support from the communities we are part of has been humbling. I cannot believe the amount of positive responses we have gotten, advice shared with us, and bookings tentatively booked for as soon as we open. Each one of you have made this scary plunge into owning a business easier.

The Freemans have also gotten support from others in the butchering community across the state.

“The support has been absolutely amazing,” Jordan said. “So many people have welcomed Bob into their lockers, invited him to come shadow for a week to learn their processes, reviewed our blueprints, helped us find equipment, let us come back again, and shared as much knowledge as they could in every single conversation, and continually remind Bob that he is welcomed back.”
